About Wild Yeast of Dublin

Wild Yeast of Dublin began in a sunny Dublin kitchen with one lively sourdough starter, one curly-haired baker, and a deep love for bread that actually tastes like something — bread with backbone.

What started as curiosity and joy turned into a deep respect for process, slowness, and the kind of craft you can’t rush. Over time, what was once “just baking” became a grounding ritual, a steady rhythm, and a way to feed people with intention, not stress.

Today, Wild Yeast of Dublin is a small, soul-forward microbakery built around one simple belief:

Good bread takes time — and that’s a beautiful thing.

We operate on a rolling small-batch baking model so each loaf gets the attention it deserves. Every dough rests, strengthens, and develops flavor naturally. Every loaf is shaped by hand. Every bake is thoughtful, calm, and crafted with care.

This isn’t factory bread.

This isn’t hurry-up bread.

This is real sourdough — the way it wants to be made. 


Meet Amy

I’m Amy — the hands, heart, and wild yeast behind the bakery.

I’m a wife, mom, Mimi, executive, and longtime Dublin local who believes bread should taste incredible, feel good in your body, and bring a sense of grounding back into your day. Baking isn’t just something I do — it’s how I slow down, show up, and care for people.

I bake with premium ingredients, long fermentation, intentional structure, and a little humor and heart baked into every loaf. I love remembering your kids’ names, hearing what dinner you’re pairing your bread with, and giving our community something warm, steady, and wonderfully human.
